Carrot and Courgette Muffins

I made these  savoury muffins today for Defne's lunch box. The recipe is from one of her favourite TV programmes I Can Cook. For readers outside UK, this is a lovely show to encourage children to learn more about food and get them cooking.
They turned out lovely: Savoury but still sweet as they have raisins. I doubled the recipe and also added a handful of cheddar cheese. I also substituted wheat flour with spelt flour.

  1. Lovely, Just pinned it on my Kid friendly Eats board !! Love that you used spelt flour instead. My kids alway take packed lunches esp since they prefer that. Will make this muffin & sneak it into their lunch :) I make a lot of homemade whole wheat pita chips for after school snack to nibbleon with Home made bean salsa and hummus.
